One might think the words “avocado” and “pudding” don’t belong in the same sentence, but we are here to tell you otherwise! Sounds weird right? Who would have thought this guacamole staple could be sweetened and whipped up with a few ingredients to create smoothest most decadent chocolate pudding ever.
We can’t get enough avocado around TBD, obviously. We love it on toast, in salads, and even as the most amazing hair mask of all time. While this may be the most unusual way we’ve ever used this fruit (and yes it is a fruit), it’s definitely the most delicious! We can’t wait for you guys to try out this recipe and even more so for the beauty benefits.This dreamy chocolate pudding is another one of our “throw everything in a blender and you’re done” recipes. Quick, easy, and delicious. Unlike traditional chocolate pudding that is loaded with sugar and lots of cream, our version contains only avocado, unsweetened cocoa powder, coconut milk, honey, vanilla and cinnamon. We love making these types of desserts at home because we can control the quality of the ingredients and we know exactly what is going onto our plate!
This is what you’ll need: (yields 2 servings)
- 2 ripe, peeled and pitted avocados
- 1/3 cup coconut milk
- 1/2 cup unsweetened cocoa powder
- 1/4 cup honey
- 1 teaspoon vanilla extract
- dash of cinnamon
The Process:
Toss everything into a blender or food processor and blend until completely smooth. Chill in the refrigerator until you’re ready to chow. (If you aren’t eating it straight out of the blender by now). Couldn’t be easier!
For extra fun (and even more beauty benefits) we topped our chocolate pudding with some non-dairy whipped coconut cream and a sprinkle of bright pink pomegranate seeds. You know, for the gorgeous effect. You can also add things like sliced banana, berries, pistachios and any other of your favorites.
Our pal, the avocado, is good for you in so many ways. They have more fat than any other fruit, but don’t let that stop you from slicing one up quite yet!
